I've got some blocks of lite firm tofu and was planning on having them marinaded with spices and baked. One simple dish I was going to do was dump on some really decent organic tomato sauce onto slices of lite firm tofu, maybe add a little Daiya cheese on top. The idea is quick and easy and to make enough so that it lasts me for a bit. That way when I go from my day job to my night job and then work some writing time in and MAYBE...

I picked up enough soya chunks to make 1.5kg (once soaked) the other day so have just made a stew and curry. The balti is a lot nicer than it looks! It's basic, but was very quick to make. I used 3 onions, 3 cloves of garlic, squeeze of lime, some Dorset Apache chilis ( ), a tablespoon of Patak extra hot curry pastem, and gently fried it all for about 30 mins to make an onion gravy. Then added some cauliflower and about 6 on the vine...

Try to eat less as possible and try to stay in bed with closed eyes so my body can rest. But also when I feel a little week I go early to bed and that is for me the best protection to stay healthy and strong. And it worked because I am not often ill or have a cold. But if I get a cold than I drink gingerwater, camomille thee. take a light soup made from own made cooked veggie water.

Wouldn't worry about it going off - it'll be fine for years after the best before date. I used to use it as a substitute for sugar in bread making.

Get a decent thai curry paste; fry some baby corn, sugar snap peas and tofu in it for about 5 minutes on a medium heat, then bung a tin of coconut milk on it and simmer for about 15-20 mins stirring occasionally.
