I've got some blocks of lite firm tofu and was planning on having them marinaded with spices and baked. One simple dish I was going to do was dump on some really decent organic
tomato sauce onto slices of lite firm tofu, maybe add a little Daiya cheese on top.
The idea is quick and easy and to make enough so that it lasts me for a bit. That way when I go from my day job to my night job ...

Wouldn't worry about it going off - it'll be fine for years after the best before date. I used to use it as a substitute for sugar in
bread making.

steamed greens

Made a crazy amount of lasagna this weekend forcing me to take out some of the rhubarbs
from the freezer to make room for all the lasagna... Anyhow I needed to make something of all that defrosted rhubard and found this recipe that I veganized:
500 gram rhubard, peeled and cut in to 1,5-2 cm pieces
1 dl water
0,5 dl sugar

Get a decent thai curry paste; fry some baby corn, sugar snap peas and
tofu in it for about 5 minutes on a medium heat, then bung a tin of coconut milk on it and simmer for about 15-20 mins stirring occasionally.
Cook some noodles and stir them in for the last 5 mins.
Gorgeous, and about a gazzilion calories a serving
