Salmon is a superb choice. High in protein and good fats. It isn't the salmon that anybody has an issue with. Bread is not ideal, and the rest of your meals needed work.

Your step son is lucky to have someone with your knowledge and dedication training him. I personally wouldn't recommend HIT training to a begginer unless they have someone with alot of knowledge training them. Whats your opinion on this? I think a standard chest/tris, back/bi's, legs, shoulders/stomach split with 3 sets of 8-12 reps for each excersice is a better route for begginers to take. As a begginer i don't think you know...

What about a push/pull/legs?
Or even a upper/lower split?
Try adding 2-3 days rest in between each work out, so your prop
rested. Im a hard gainer (super ecto) & It seems to be working
for me.

You answered your own question mate. Push, Pull, Legs.
4/5 exercises a day, 4 sets of 8 reps per exercise should be easily do-able in 1hour.
Alternatively you could try a split like below;
Legs/shoulders
Back/Bi's
Chest/Tri's
But personally if i could only get 3 workouts in, i'd go for push/pull/legs.
Make sure you get the heavy compounds in too. Push day start with flat ...

Basicaly it looks good mate, although you're doing deadlifts twice a week just do them on back day. I personally do bi's with back and tri's with chest and leave the dumbell kickbacks out as they're for girls
all in all it looks sound, good to see the big 3 compounds in there

Lots of changes to the diet needed mate. Ready meal, a sandwich and a couple of shakes aren't going to cut it.
Have a read of the posts in the diet forum. Base each meal around a protein source (chicken, turkey, beef, eggs etc), a carb source (oats, rice, pasta), some veg or fruit, and a fat source (natty PB, nuts, eggs, extra virgin olive oil etc).

I do both, but reckon my best gains are coming from dumbbells. This could be psycological, but i'm gonna go with it for now as it makes me feel good!!!
