According to my pal Wikipedia, Qantas is the only airline that flies to Ayers Rock: http://en.wikipedia.org/wiki/Ayers_Rock_Airport And it doesn't look like it flies directly from Melbourne, ugh.
But it looks like you could take Tiger Airways to
Alice Springs Airport, which is farther away. http://www.tigerairways.com

home exchange - how great is that??? Where abouts will you be staying in Melbourne? Home exchanges sound like the way to go, unfortunately mine is about an hour out of Sydney so I don't think it would be as popular as one closer to the city.

Google Sheep Station Holidays Australia and a great many different properties pop up. Remember to put in Station , not ranch! [that is what we call them in Australia, a farm is small and very rural a station is big and tends to be a bit 'outback'!]
Alternatively contact the tourist bureau in each State.
