Whyyyy have I never thought of the cool sheet thing? That makes perfect sense yet I never thought of it. Question though... I'm blanking on 'silpat'... what is that, exactly? Thank you to you both. :-)

I silpat (not sure on the spelling) is a reusable flexible silicone sheet that is VERY non stick.

Well most of the time we have some cold weather, sometimes freezing, a lot of rain. You can have no snow at all for 5 years in a row and then have a month of uniterrupted snow, although it's never cold enough for it to actually stick (excepted in the southern part of the country, where you can ski sometimes). I can bake cakes, make candy, cook like a fiend... I absolutely cannot bake cookies!  Either I make burnt crispy Frisbees, or the edges and bottom are burnt while the insides are practically liquid. I have no idea why I screw it up- I've tried in different ovens, different pans...  I need help! Anyone have any no-fail recipes or tips... or anything, really.  I'm tired of not being able to...

My family has a wonderful secret family recipie for an apple crisp that I have spent years adjusting & perfecting. In doing this I learned several things about baking with apples. I've been trying to find an apple crisp recipe.  DH really wants a "crispy crisp".  I think the one I just tried that had brown sugar and oats in the crisp (with butter and walnuts too) came close, but he didn't care for the oats.  I've seen a ton of recipes with stuff like flour, graham crackers, etc, but that's not crispy enough for him.  So I'd like something like the first one I mentioned ...
