Rosemary and alliums sound pretty good though - I'll give it a try... Thanks!! I was using allium as a short cut, I throw in some garlic, some onion, and maybe some shallots. Some I may dice, some I may leave whole. Garlic cooked in the chicken stuff is good. But the skin comes out like it was boiled. Adrienne drew the line at that, she needs her crispy skin, she thinks it is the best part. Trust me - You do NOT want to disagree with...

Hmmm, those spare ribs sound good. I've got a bunch of smoked ribs in the freezer so I think I will get some out for tomorrow. The U OF U is playing TCU, should be a good game but it would be even better with some ribs to chew on. Phred

Last night I finished up the rest of my smoked spare ribs that I smoked last Sunday (well, I still have about 4-5 lbs frozen in the freezer). Had some left over beans and lamb with cornbread, so I heated that up as a side. Fried up ? of a big ol' russet potato, diced, with some diced onion and steamed with a little beer when all was nice and browned. Nuked some frozen corn and diced jalapenos to go with it all. You don't need daylight to fire up the smoker. All-nighters are the best way to go. You do need beer, though.

Seems so - I listened to Christmas Carols on a local radio station on my way to work, yesterday... reminded me that I need to file the remaining paperwork on the fire that burned up most of my stuff a week and a day before last Christmas... wasn't the best Christmas I've had, but could have been worse.
