Does the server have more than one network card, is DNS working correctly? Try adding an entry in the host file for the exchange and see if that works.

Cheers Guys. Well I installed SP1 (don't have SP2 media) onto a Win2k8 member server and it worked fine. FYI for anyone I have 2 x Win2k8 GC's and 1 2003 GC in the domain with the FSMO roles only on the 2008 servers... All working ok! Thanks again,   Steve. I have users on the BT one and it has been pretty good so far. Also, if you use a smart host you can't fuly track and email from end to end should a user complain of missing emails.

thank you. would you know of any steps that can be taken to fix this issue? can a backup be made and then exchange uninstalled and reinstalled and then restored?

UPDATE- I just found out its the Outlook 2007 clients which give this error. It seems the Outlook 2003 and 2002 clients do not have this problem. (However, their global address book shows long-winded email addresses like  /0=company name/ou=Exchange Administrative Group (FYDIBFFH34SPDLT)/cn=Recipient/cn=username  ) My own Outlook client is filling up with Sync issues every time I send/receive, with this content:...

Well, going to file this one under "Crap Happens". After over two hours, the mailbox now works properly. I'm Certifiable, not cert-ified. It just means my answers are from experience, not a book. There are no more PDC's! There are DC's with FSMO roles!

Upgrade Exchange 2007 SP1 to SP2

Upgrading to sp2 is pretty straight forward and will take about 15minutes a machine. The ccr cluster is a little different to do but the instructions are easy to follow. It basically reinstalls the entire exchange on each server.

SBS 2008 uses Exchange 2007 and I've just upgraded our exchange to sp2 so I'd say that it will work fine in a 2008 only environment. "Anything that's invented between when you're fifteen and thirty-five is new and exciting and revolutionary, and you can probably get a career in it. Anything invented after you're thirty-five is against the natural order of things."
