I love beats, but understand most kids don't. I also love peas and have a great minted pea and parmesan recipe, but again 21 year olds. I think beans or broccoli are your best best. Now you already have cheese with the mac and cheese so I would suggest as above roasted. I loved my roasted broccoli and cauliflower recipe. No recipe needed. Loving the menus posted. Hope you all had a great weekend! I was busy doing all sorts of cleaning/outdoor work this weekend and didn't get around to my menu planning/grocery shopping until today. Things make a little more sense, though it doesn't seem to be a useful planning tool. Just a place for me to list my days and type what I want to make. Well, I love roasted vegs. So I would probably roast either carrots and parsnips, or green beans, or asparagus. I have reheated the carrots before with no problems, can't say for sure about the green beans or asparagus.

Tomorrow with only 2 days notice I am hosting a party 3-6 for cancer research. All appetizers for 40 people. We do it every year, just normally in December. Last minute to do it this weekend. Most people are regulars our 5th year and none have kids so Halloween wasn't an issue. The football game was more of an issue than ...
