We use very little pesto, but I do make a double batch or two at the end of the summer and freeze it in ice cube trays. It seems to keep just fine through the winter - it gets a little dark on the top of the cubes, but I don't use as much oil as maybe I should.

I have a ton of walnuts leftover from christmas. I don't use them very often and I don't want them to go bad...can I put them in the fridge or freezer and keep them longer? If so, how long will they keep? Thanks!

Thanks everyone! I've frozen the premade pesto but never homemade. Sounds like a plan for me...I've never seen it in bulk at my local Sam's Club, but I'll keep an eye out for it! Thanks!

I always keep nuts in the freezer - right now, I think I've got pecans, walnuts and pine nuts in there.
I don't know how long they're supposed to keep, but I'm pretty sure the walnuts, at least, have been there for at least a year - I usually buy a big bag for Christmas baklava, and I bought extra last year, then I didn't make any this year. And they're still fine.

Buy an inexpensive insulated lunch bag and some blue ice. You freeze the blue ice, put it in the bag with the food, and it stays cold for hours.
In the cold weather, you might want to give him a thermos of hot soup. I also understand you can do a hot dog in a thermos some way, too. Maybe someone else knows how?

Here were some of my Meijer deals this week..Although I think the new sales start tomorrow - so I will make sure to come back and post again. I'm located in Michigan.
Kraft Macaroini & Cheese - buy 3/get 3 free..that worked out to .39 a box!
General Mills cereals - 5 for 9.00 ; buy 3 of them and use a 1.00 off 3 coupon - works out to 1.47 each.

I was pleased to find this one during the Zaar World Tour. You can either freeze the chicken in the marinade, or pour the marinade into the bag when the chicken is thawing. You can also cook the chicken on the grill, in the oven or in a pan on the stove.

Just this week I had three budget meals in my meal plan that got there because they are all time favorites and the budget cost is a added benefit. We had salmon patties and macaroni and cheese one night, pinto beans and ham another night and chicken and dumplings another. Oh, and all day today we have had leftovers so today was a "freebie."

We did a leg of lamb last weekend, and I used the leftovers for a shepherd's pie, which was quite nice. I used the leftover meat, gravy, and some of the last of the Swiss chard from the garden (that I had to dig out from under the snow!) and, of course, lots of mashed potatoes on top. Not spicy, no, but the ultimate in comfort food, and great for using up some leftovers!
