Thanks for the response to the many replies on probrewer Ralph. I will speak on behalf of some of the very small brewers out there. When the you know what hit the fan and the shortage began, many brewers, myself included looked at the situation at hand. I don't think it is protein haze, but large amounts of dry hopping definitely will produce a "hop haze."

Be afraid.
Perhaps downsize from the ideal 20 foot trellis to 10 or so. Anchor guy wires well. Look closely at commercial photos and note that they use cross wires as well-also
well anchored into the ground. Consider you may want to design the ability to re-cinch the wires each year.

Well I got 4lb of NY State Cascade hops
as a gift. I've put them in the freezer and plan on using them in an IPA soon. Perhaps I can call it "Upstate IPA"? Anyway, the smell is nice, but predominantly piney and not really like the Cascade I know from out west. I'm betting it will make a great beer.

Because most of us signed 3-5 yr hop contracts last year in order to ensure supply. Even if I've got left over 2008
hops, I'm already committed to buying just as many in 2009. You're right in that 09 hops will be cheaper than our contracts, and probably not hard to come by. Last year many of us listened to our suppliers who said, "You better sign these contracts or you might not be able to get ...

I have heard of simply
steeping said adjuncts in vodka, bourbon or whiskey for some of these applications. Not sure exactly what would work, but testing would be quick & cost effective.

foothills hops in NY. They don't have much left but you can try for next years crop. Not sure of their #
