The 242's have been known to break the planet gear axles loose from the diff and the forks are a common wear item too. Pop the drain plug out for a second and examine the fluid- it should give an indicator of minor or major damage.

Sounds like a stuck t-stat to me, although the cold shouldn't have caused that... as the coolant heated up so should it.
And 50/50 standard
ethylene glycol mix should be good to about -30, so unless its contaminated with something or not mixed right it couldn't have frozen.
What year is your XJ?
Was there a lot of coolant in the reservoir?
How long were you driving it between ...
