I use this recipe. It will make about 24 muffin sized cupcakes. I have changed the recipe slightly and use 1 cup of castor sugar and 2 tsp baking powder and 1 tsp bicarb

I have found that an unsmoked joint works better than smoked. I do it in ordinary coke tho, not cherry coke.

I normally boil it for about half the cooking time with bay leaves then in the oven with fat scored and drizzled in honey and mustard

Yes, a gammon joint. I have just ordered one from ocado. to eb delivered later this week, as I am going to do Nigella's ham in cherry coke on the 23rd when our friends come round. I did it for the first time last year and it is really easy to cook ham; it basically sits n a big pan and boils away for a while

What about Jamie's Dinners? Or the DinnerLady book? Both came out around the time of Jamie oliver's campaigns to get schools and Britain eating better and have proper tradational and easy recipes. Or there are Delia's How to Cook books there were 3 of them.
