The beater blade is awesome. Baking is much more fun/efficient when you no longer have to stop beating to scrape down the sides of the bowl.

i like to use gravenstein, cortland and macoun foe apple pie. my nana always used spices like cinnamon, nutmeg, cloves and allspice depending on the apples. sometimes white
raisins soaked in cognac also made their way into some of the pies and always lemon juice and lemon zest.
