In any kind of stance,
zanshin needs to clearly demonstrate that your attacking spirit (for lack of a better English word at present) is ready and on the go even after the motion is completed. The physical manifestations of zanshin are often subjective on a case by case basis.

Another important tip from the
Musashi-Kai report is that a solid Nito stance has essentially no openings. This alone can frustrate some opponents, at least the ones not used to fighting against Nito. (Of course, the good opponents immediately know that *something* is always open.)
I agree with what you said that you cannot just use the shoto to slap the opponent's kensen away. For one ...

So, why are
Shinken used in Iaito, instead of non-"live" Iaito? I would assume that it would be a similar purpose/reason?

2000, I think? You can get it direct from FIK here or from e-
bogu there . Cheaper from FIK but the shipping might be an issue.
