Well done Sarah it really works doesn't it?
In a "fat meal" you can always put a bit of butter on your veg,
my son gave me a great recipe:
Mash together cooked carrot, swede, and parsnip.
Fry an onion in some olive oil or butter,
add some turmeric and coriander seeds(or powder)
stir this into the veg mash, it's delicious.
