4) Do what many many of us do and skip secondary all together and opt instead for the long primary....I leave mine in primary for a month, then bottle. I have found my beer is much better for doing that.

well with the white labs its recommended that you make a yeast starter a day in advance but with the dry you don't have to really you don't even have to reconstitute it most people do but i don't think it has to be. but it looks like you payed extra for the white labs so i would prefer using that. i dont know though how well it will work with out a starter since your gonna brew today.

I would not dry hop a stout. I've tasted many stouts that were and I have yet to find a hop aroma that complements a good stout.

Well, you should go ahead and ignore the frequency of the bubbles. Any airlock activity is simply a co-sign that can give a hint that something's taking place. The far more reliable (indeed, the only scientific method) of knowing when the fermentation is finished is to take regular readings with your hydrometer. When three consecutive days' readings are identical, then this is a good sign that the fermentation has stopped. If...

I've never used Fermcap but I've heard a lot of folks give it a big thumbs up with no effect on head. It settles out in the primary.

+1 to what Revvy says. If you really want to secondary, it is not a problems using a 6 gallon. You will knock the CO2 out of suspension when you rack and it will re-blanket your beer with its protective layer.

All you need is the wheat extract, no grains. Crystal is really out of style. Bittering hops will need to go to 1 ounce. 3068 is your Bavarian style yeast which to me is the yeast for the style.

There is a lot you can do, but I would not worry about that.
I would brew it as is, and concentrate on the process.
The beer will be good.
Learn the process. Read the book again.
cue line of people with 10,000 suggestions on things you can do.
Repeat to yourself: the beer will be good. follow the recipe. the beer will be good. follow the recipe.

Keep going....It may not taste exactly like you intended, but it will still be beer.
Just learn from your mistake for next time....go over your recipe before you brew and lay everytihing out in order you are going to need it.

If you have a rubber washer on the inside and out that should take care of not needing caulk. Can you tell where the leak it coming from? The spigot is made out of three moving parts and I've had a leak from one of those areas, had to just replace the spigot.

If you are going to do the recipe to the exact then make sure the yeast that you use can take the temps that are in your basement. I for one think you should be alright. You might not get a real active fermentation and it should take a little while longer due the the cool temps. Good luck. I did the recipe but used Wyeast 3068 (Wheat Yeast) with it. It has been in the keg aging for 8 months ...

I never judge a beer by what it tastes like while its in the fermenter. I don't keg, but I never judge a beer of my own until it has been in the bottle for quite a while. If it's 'good' when it's been in the bottle for 6 weeks, it's usually better when it's been in there for 12

Know exactly how much beer you have in the bottling bucket. A half gallon more or less than 5gl can make a difference. Try weighing you sugar instead of using cups if you are doing that. Make sure the beer is done and the yeasts have finished their job. These things can really help with bottle carbing. There really isn't a way to changeyhe carbonation already built up in those bottles.

I've brewed 8-9 extract batches this year. All good. None great. They all have a sweet undertone to them. They aren't finishing as dry as a typical commercial beer tastes.
I'm hitting my numbers OG/FG. I'm ususally at least 2 weeks in primary plus 1-2 weeks in secondary. I'm using tap water - sometimes straight, sometimes filtered from refrigerator. My extract is fresh.

It's not important, it's simply more stupidity being promoted by beer

I let a batch of IPA sit around for about that long once.
I finally racked it, pitched some yeast, added some hop pellets, let is sit for two weeks then bottled.

I made a Belgian Saison last night, somehow I steeped the carapils and unmalted wheat at 180 deg F instead of 155 for 30 minutes. I did NOT boil them...the highest they reached was 180 and by the end of the 30 minutes it was 170ish. My guess is that my beer will turn out just fine since I didn't boil the grains...but is there any negative effects from steeping too high? And if I would have ...

Sounds to me like a clogged blow-off. Have u carefully checked that? I can't imagine what would raise the pressure enough to blow the lid w/out a impedance of the blow-off.
