High school sucks. You basically are put in the mix of future felons and politicians. Confrontation verbally in public might reduce the attack. Those are weak people and if you are making it difficult for them they will move on to someone else.

Personally, I'd probably respond with something that could easily be deemed inappropriate. They are acting stupid, its as plain as that. Racial difference, if it can be considered a difference, is really no ground for mocking or pranking. They have no right to bother you, and you should really not pay attention to anything they are saying, eventually they should get bored and look for something better to do. If they are bullying you in a heavier way (eg: physical violence, embarrassing you etc...) then please tell an authority...

Go with law. Law is great. It's simple and fairly interesting. And it looks good if you can get good marks.

Either grow skin or tell a teacher. Your only two options, really. If you comment about their race it only instigates more issues and escalates the situation. Everybody gets picked on in middle school, so it's a matter of ignoring it and accepting it as a fact of life. It's going to bother you until you stop letting it bother you.

If you've already told them that you're not Chinese (it may help to tell them what you are, if you prefer to do that) and they're still disrespecting you and bullying you, you should tell a teacher. To make racist jokes about them would be stooping to their level. By telling a teacher and working things out between you and the girls, you show your maturity.
