Oh Lisa, I always salivate when Central Market in Austin and Houston roasts them outdoors.I even get the email to tell me that they Hatch chili's have shown up!!!!!!!! My freezer is full. My downfall is passing the chili selection in the grocery store. I always pick them up they smell soooooo good that they call my name. My first taste was in Deming when my roommate took me home at Christmas time. Been hooked ever since. 25 years now!

Hi! I live in southern New Mexico, 40 miles south of Hatch. I don't really have a recipe for it but I found one that's pretty basic, and what you'd normally find down here. Although some of the restaurants down here put potatoes in theirs - the website says you can add hominy for posole, but posole is usually made with red chile. Anyway, oddly enough, it's a central Texas website, lol: Austin Food: Hatch Green Chile Stew -...

What is it like? I have a couple, but I don't know what kind you're looking for. One uses roasted poblano peppers and cheese, another has serranos and cilantro.

So is it usually made with ground pork? Or beef? Tomatoes and condiments? If anyone would like to share their recipes, a "regular" chili, so I have an idea of what it tastes like and a unique one to play , I'd appreciate it. (Lynn, I haven't used my anchovies yet!! I'm waiting for a special occasion but I don't want anyone over because I don't want to share! LOL.)

Oh, BC my BC... Lynn, please share some delicious main-dish recipes that go well with the potato-anchovy dish. What do they serve it with? Meat and a salad? Fish? Any other traditional recipes I can prepare with stuff that's available here? __________________...
