I really enjoy spaghetti squash with just a little butter and some S&P, it's a little crunchy and fresh and tasty. I find it a little too sweet to have with pasta sauce, unless butter and S&P are considered pasta sauce. We never get enough of it.

My gang loves the potatoes cooked and mashed with peel on a rough chop so that there are hunks or good sized pieces of potatoes. Usually Yukon Golds at times russets. Then we add salt and pepper and several sticks of butter. Other times I peel them boil, rice them. Glad I found this! I have one thats waiting to be eaten. My beloved other half wrinkled his nose at it but I am going to cook it, serve it with some steamed zuccini, garlic, S & P and portabello mushroom and rice. If he doesnt want any thats his loss. I used to hate it when I was "little" now I love it samer with the zucc. I'm going to try roasting the seeds!!!

I have tried baking russets in the oven too and then turning them into mashed potatoes. They did have a strong potato flavor than the boiled like another posted said. I would recommend to anyone if you haven't tried it, given it a whirl. If I do boil the potatos I try to take Alton Brown's advice and use a combo of russets and reds.

My suggestion would be to half the squash and seed it before you cook it. Place the cut side down on a plate and nuke till done.

imho, russet potatoes don't steam well. They are very starchy, and lend themselves much more to baking. I boil them for mashed potatoes, but not for any other purpose. I would use yukon golds, or other less starchy potato for steaming or serving as "boiled."
