This recipe sounds great! My daughter was supposed to buy canned cranberries for a salad she was making and they were not available in her area. (small country store). She bought fresh and she cooked them. Cranberries have a natural pectin and the dish came out GREAT. Thanks for all the fun after Thanksgiving recipes.

Pat about a quarter of a cup of shredded Parmesan (use the best one you can afford) into a circle on a Silpat or nonstick pan and bake them at 325° for 8-10 minutes until golden. Then you can either let them cool on the sheet before removing, or, if you want to do it French Laundry style, take the warm circle and carefully mold it over the bottom of an egg carton to form a cup, which you can then fill with a mousse-y mix of fresh goat cheese...

foxl , I bet my failed coconut cream ice cream (solidified to a mousse while refrigerating it) would work fine--kids had me make it as a mousse, the next day, for Thanksgiving dinner. The half-cup of coffee doesn't really come through, but you could use boiling water to dissolve the agar-agar, instead.

I believe you can use all of the methods that you were wondering about. I recently pan-fried (without oil) a pile of shredded cheddar cheese until crispy and chewy and it was delicious. I think it would work much better with shredded cheese than not. Also, if you choose the broiler, make sure you use a silpat or non-stick pan.

Joyce, that first Thanksgiving after diagnosis was quite stressful for me.
The best advice I can give you is to relax. It's only one day, only one meal, and if your family fixes a traditional Thanksgiving meal, you should have plenty of options.

years ago, I used my crock pot almost daily, must get it back out. Meats & veg cook well in it, but I never had luck with rice. it turns to mush, so if I were you, I'd omit the rice in the second recipe, & just add it ( the rice) cooked before serving, Hope your meals done out well

As I began reading your post, my mind was going to KitchenAid before I ever
got to the end. While I don't have the ice cream accessories, I've had my
KitchenAid mixer for 25 years, had it rebuilt once back in the mid-1990s,
and could absolutely not run my kitchen without it. Good luck with your ice

Nancy be CAREFUL! I strained a ligament in my wrist on a pumpkin, a couple yrs ago, making stew!
Only easy thing I know is ... get your HUSBAND to cut it up!
And have him use a chef knife or something else with a VERY broad blade, like a CLEAVER!
