Another tip to ad to Pete's wise advice: when a recipe says to cook on high, don't believe it, of course unless you like a lot of carbon crunchies in your food. The only thing I have ever seen that might require a high heat is something blackened, like blackened fish. And for God's sake don't do what I did and try it in the house. Chantie, ArrTee posted a similar question under the chat room forum recently and there were some good suggestions there. You might want to go to Chat Room and look for his post asking for suggestions for decent cookware. His decision was based off of research and comments from posters if I remember correctly. bread dough can be kept refrigerated for several days. the long slow cold rise is often cited as a flavor builder . . lop off a chunk, let it rise on the counter / covered for 30-60 minutes, pop it in the oven. rolls ala one-at-a-time. if you only want a roll twice a week,,, not gonna work. you can also freeze (for example - half) a dough batch - allow 48 hrs for thawing (in the fridge)

Yesterday I caught a portion of the Martha Stewart Show. She was demonstrating the new pasta making attachment for the Kitchen Aid Mixer. It fits all models of the mixer and attaches to the same spot on the front of the mixer that the other attachments use. It was very cool to watch her making different types of pasta and cutting the pasta to the size you want. It looked very easy to use as there is no rolling of the pasta involved. She made...

hey hey, so I pulled out my wok a couple of days ago. Havent used it in at least 3 years, in fact hubby was using it under the kitchen counter to catch water when the sink kept leaking a while back. But I was making egg rolls, and for that a wok is a must ( ok probably only in my mind) and since I own the thing (ok I didnt pay a cent for it I got it for free) I figured might as well use it. This is what I recommended in an earlier thread that had a similar question. Tramontina tri clad stainless at Walmart. Cook's Illustrated says they are just about as good as All Clad at 1/8 the price. You can get a set or individual pieces. A set starts at about $130. A 2qt saucepan at $30. A heck of a buy. If they burn them they may be discolored but they probably won't be ruined.

My double reversible cast iron Lodge griddle has rust spots! They're on the grilling side only (so far ). It's immediately dried after cooking and oiled too. I store it inside my oven though, which I've read somewhere that it's okay to do. Storage is a huge issue in my compact kitchen. Maybe sometimes moisture in the oven gets to it despite the seasoning? Jana, I've never heard of the ground meat seperator either, a picture would be great. I hate cooking ground beef and standing there with a spoon to break up all the chunks! Just an update- I seasoned this pan yesterday and used it this morning to fry a couple of eggs. Against my expectations, it was totally nonstick. The surface does not look smooth so I thought there would be stickage but the eggs came up beautifully. I own a 20 year old Panasonic, a large Zo and the 1lb Zo AND Emeril's unit. I have also owned in the past a Welbuilt and a Westbend. I love the dough cycles. A friend of mine gave me a cast iron pan that was like that. A sanding disk in my die-grinder, and a re-season worked for me. Took about 5-10 minutes of sanding.

'but it didn't go thru the dishwasher on sterilize cycle . This statement cracks me up. When you cook with the pan it gets alot hotter than any dishwasher will get it. It is self sterilizing.
