Spaghetti Squash?
Published (2009-12-06 18:00:00)
You can do it either way. I baked mine whole. Here are the pros and cons of each. Cutting Up Spaghetti Squash Advantages to cutting the spaghetti squash up before cooking: It cooks faster. Disadvantages: Like any winter squash, hacking it up takes muscle and a sharp knife or cleaver. It's also a bit more work to scrape out the seeds and pulp when they are raw. Method: Just get in there and cut it in half (lengthwise) or quarters. You...

Holiday Side dishes

Here is a very yummy spinach casserole recipe that even spinach haters like -- at least the ones I've fed! It's pretty for Christmas. Mix and cook as two separate casseroles (instead of doubling) and you'll have twenty servings. This is a recipe from an early 80s Southern Living cookbook. 3 (10 ounce) packages frozen chopped spinach, 3 (3 ounce) packages cream cheese, 4 tablespoons butter or margarine, divided, salt and pepper,...

I believe the slower you cook, them, the tenderer they are. You might try putting them in the frying pan with a bit of water and covering it, letting them partially steam-cook, and just leaving them there after the steam boils away, then when fully cooked, raise the heat to brown them.

Instead of mayo or sour cream a friend taught me to use a little ranch dressing. It actually adds a bit to the flavor and even just a little smooths the texture out so nicely!
My "pantry" guac recipe (called so because other than avocados, all the ingredients are easily found in my pantry-quick and no chopping!) is avocados, lemon juice, ranch dressing, garlic powder, onion powder, salt, and...

I think the best plan with that many people, is to make a good combination of cold, stovetop and oven dishes. Things like deviled eggs, potato salad and copper penny carrots are good cold dishes (make ahead too!). Then simple sides on the stovetop. Add some hearty veggie casseroles and you will have a nice mix.
When I try to decide on sides I always look at color too. We don't want ...

How about a vegetable, fruit, and cheese tray. You can also make a couple dips (spinach, french onion, cucumber yogurt) and set out some fancy crackers.

Here is one, no cooking involved.
Roma tomatoes. half a dozen or so.
A large red onion.
One bunch of cilantro.
Chop all coarse, not too small pieces.
Add a good amount of Chinese sweet hot sauce.
Then for additional *heat*, a good squirt of *Sriracha* hot sauce.
