So I made this but I made it into little mini torts. They were a HUGE success! I used a 24 count mini muffin tin. I spread a little bit of the oreos in each one (it really only needs to be a little bit!) and about a tablespoon of the filling then glazed them. I used about half of the filling that the recipe made. It reduces the baking times of both sections and I think they come out to 2 for 3 points. I need to do a better job at calculating...

Thanks for starting the thread, Jillian. Glad you enjoyed the movie. I am not a Twilight fan. I tried but failed to enjoy the book so I haven't seen the movies. It's fun to go to a midnight showing of a cult following movie like that though. I went to a midnight showing of X-men 2 when it came out with my BF at the time. It's interesting to see the kinds of people who turn out. When I was in HS I worked at a theater. That same...

two suggestions: Turkey stuffin muffins, turkey salad Muffins: When you make them from scratch it's 1lb ground turkey, a box of stovetop and a can of turkey or chicken broth. So i would assume if you are doing it with real turkey and real stuffing.... it would already be moist. Anyway, put it in a muffin tin and bake it. I add apples, raisins, onion and cellery to my stuffing to get some fruit in, then I eat it with cranberry sauce....

How's everyone doing? It's a dreary day in NYC, but I WILL make it to the gym tonight for yoga and some cardio.
Last week I went for Pilates but the class was cancelled. I was so ready to just go straight home, but the owner of the gym gave me a little pep talk and convinced me to stay. Just thought I' d mention that.
Weekend was low-key. Had a G2G with girls from another...

I vow to lose 10 pounds between now and 12/23 (my WI day). I vow to earn at least 8 AP's a week until then. I bite it, i write it. That's 9 weeks away! So losing 10 pounds over 9 weeks is like, a little over a pound a week. totally do-able. and i'd be pretty excited if i could get more!

You could definitely use eggbeaters instead of eggs and sub splenda for some of the sugar.
I searched online for shortening substitutes; you could use butter/margarine instead. I also read that you could use half shortening, half mayo...I'm wondering if light or ff mayo would work?!
I would try using half a cup of nuts and half a cup of oats.
Let us know what you decide to do and how ...

Had a good OP day yesterday. I made the gaucho recipe casserole which I found here on BCB. I wasn't a huge fan of it, but my parents devoured it so it must just be me.
I'm praying for a good WI this week. I need to keep up with my christmas weight loss challenge... which I figured at a 2lbs loss per week.. which may have been setting my sights high, but I'll do the best I can.

How is everyone this morning? I am SO not excited that it's monday. I'm ready to get back to bed, personally. I just had a rough week/weekend last week and I'm just not with it.. I had a few bad slip ups with eating. Nothing crazy, and I still loss last week so, I can be grateful for that. I'm just gonna try harder this week to stay on track, still with everything going on.
