I think protein may be too high. AD is a form of keto diet, right? If your weight is 155lb that's too much protein. Other than that it looks good to me. I'm a huge fan of walnuts, almonds, pumpkin and sunflower seeds if you get a wild hair (a lot cheaper than walnuts and almonds.) You may want to throw some more foods around earlier in the day. The fluctuations, especially that small, are normal. Something as small as extra sweating and using the restroom can cause fluctuations of that magnitude. It just seems that your body has a set point that it wants to maintain around 182 and you are going to have to increase your caloric intake further to push past that.

The differences between white and brown rice as far as GI rating are over-exaggerated. Stick with a "long-grain" rice whether you go with white or brown is up to you. You should probably up your protein powder to 2 scoops per serving. You are pretty low carb. You might consider a keto diet with a bit higher healthy fats if you're going to go that low carb anyway. Make sure your lean protein measurements are in cooked weight. 8 oz raw may be a bit on the low end for your protein needs.
