Honestly, I am fairly certain your lack of irritation is due to not doing the ATG pass, and not at all connected to not using the Witch Hazel/ Nivea.
Honestly, I don't understand the obsession with BBS shaves. Nobody besides yourself, and possibly your SO will ever notice the difference between a Socially Acceptable Shave, and a BBS shave.
It is simply not worth risking irritation for ...

Probably lather hogs. Don't worry too much about it. Just keep swirling on your face for awhile, and then use " paintbrush" motions to put the lather in an even layer on your face.
My Tweezerman was the worst lather hog ever.

If your blade it sharp, it's unlikely a problem of pulling on your hair. I believe the Progress is a pretty aggressive razor, so you might want to dial it down a bit more.

Welcome aboard. Don't get discouraged. Make sure you are going with the grain on your first pass. Check your own face with your fingers to find out what WTG is for you. My stubble on my neck grows sideways so I have to do my first pass on the neck from left to right, not downwards. Your second pass should be across the grain. Some people will go against the grain on their third pass but I just go...

Creams are great. You have to play around and find what works for you.
I use Tumpers, TOBS or Domenco Caraceni in a moss scuttle and like it a lot.
On the other hand, a couple of my best recent shaves came from AOS lavender soap. There is something to be said for the tallow soaps too.

Welcome and the only advice i will give you is go slow and no pressure. I to was a a 3 blade then a five blade guy and trust me it took me awhile to get this DE stuff down. However if you go slow and keep at it i am sure you will get better shaves as we all seem to do here....
