Sounds like the exhaust
pressure sensor has gone kaput to me. Happened to my previous one but it was under warranty so it was fixed. No idea how easy to fix/cheap to repair but it's not a major failure I don't think. Car was in a for a day at the dealer and everything fine the day after.

My old Mk5 2.0 GT TDi used the same stalk as the present
Octavia so the adjustment is on the top and can be set in one of three positions. HTH

There is no definitive guide as it is not really designed for the casual user and the car has a fair few computers in it rather than just one central system.
Once you get to grips with it is is fairly easy to do.
