I like the Michelin XPS Rib tire for my trucks. It's expensive but is a commercial grade tire and suitable for heavy loads. There is also a XPS Traction tire available too but I never used that tire as the Rib style has plenty of traction for the way I drive.
The ride is smooth and quiet and I find it holds the road well.

One thing a run-flat may be less likely to do is disintegrate and tear up the trailer like so many conventional tires.
Seems to me that run-flats combined with tire
pressure sensors should be a pretty bullet proof combination.

Your post says your new tires 225/70's. Does the lower diameter
tire diameter affect the stance of your trailer? I'd love to see a picture of your trailer with the smaller tires on it.

p.s. - my current tire size is 225/75/15. It looks like any LT tire would need a 16 rim...so unless I
wanted to buy new rims, maybe sticking to the Maxxis 8008 Load Range E would be the best bet for now?

Depends on the rating of the tire. D rated Marathons have a max cold inflation level of 65 psi as stamped on the side wall. You also, dependent upon year of your Airstream, have a label listing inflation pressures that Airstream mounts on the body of the trailer. My recommended inflation based on the tag is 65 psi.
