I am a big fan of beer, but I've swithed to gin and diet tonic water w/lemon and have not had any stalls as of yet. I drink maybe 2-3 of these every other day. I also ride my exercise bike quite a bit. If you watch your carbs closely and get some exercise in, a couple of low carb drinks a day probably won't hurt. -Rob

The body will use the alcohol as the preferred fuel when you consume it. It isn't actual "Fat" and the weight should go away pretty quickly. Keep your carbs low the next couple of days and push the water.

If chocolate is your downfall, you might want to try whipping a couple of tablespoons of heavy cream with Splenda (or your preferred sweetener) to taste and a teaspoon or so of cocoa powder. If pizza is your thing, there's a recipe at the link "poke" posted for pizza fillings on a portabello mushroom - yum! Also, sliced cucumber or zucchini make a great carrier for high fat, low carb spreads and/or dips. Arm yourselves...

I like the EAS protein too. I'd stay away from soy milk personally, since soy is estrogenic. I use water, ice and heavy cream - no carbs at all. Of course,if dairy is a problem for you, you can use coconut milk instead of cream.

Has your daughter seen a GYN for possible PCOS-- polycystic ovarian syndrome?
Does she have regular periods? You mentioned Acanthosis Nigricans--does she have the darkened patches in her axilla, groin, around the neck area? Does she have skin tags?
I'm sorry I'm not used to the measure of glucose that you're using but it sounds very much like diabetes. It cannot hurt to take her blood sugars...

What's happened is that you've come out of ketosis because of the alcohol and when you come out of ketosis you're body retains the water needed to store carbs. Go right back to induction levels and it will come off when you hit ketosis again.
Next time, I'd suggest avoiding beer - it's probably the worst choice of all alcohol. I occasionally have a glass of red wine and do not get that ...

Have you had a look through the "Kitchen" forum right here on this site? If you haven't found it yet it's click here -- at the top of each subforum there's a "sticky" that lists all the recipes suitable for induction, then just click on any that sound interesting.

Generally I prepare meat and veggies and then a carby side dish. Nothing fancy here at all. I have one really skinny 8 year old, an average sized 18 year old and an overweight 18 year old (she was "Vegitarian" for a while - actually carbitarian).
All you can do is offer good wholesome foods.
