Are you sure you had both 360's on the network and connected to live at the same time, both with open NAT? Reason for asking is I know my router wont forward the same ports to more than one IP. So I would never be able to have more than one 360 with an open NAT at any one time. I seem to recall reading that it just wasn't possible. One open and one Moderate is as about as good as it gets....

You don't state what else you use t'internet for.... For example, if you ONLY use the internet for xbox gaming, then your 40 gig will probably provide 30 days, of 24 hour a day gaming... with plenty to spare!
