Snow Leopard QuickTime Player will do this, so you don't need to install any third party apps. Load up your video in QTP, hit Share on the Menu Bar, then iTunes and you'll be presented with an iPhone and iPod selection. This will export your video straight into iTunes for syncing to your iPod.
