I would imagine that the answer to my questions is 'yes', but if you don't ask...
Can the recordings made by an iPod with plug in microphone be moved to a Mac HD? Can they be imported/understood/used by Mac applications?

Depends which photos you mean.
1- The ones from iPhoto, I just create Albums, then the Albums' names show up in the itunes sync Photos page, check the folders you want to sync, the albums copy over as Albums.
edit--- oh I see you can do the same thing with Events, it;s on the Photo sync page.
2- as far as the photos you have saved on the Touch itself from email or web, not sure if ...

QuickTime Player will do this, so you don't need to install any third party apps.
Load up your video in QTP, hit Share on the Menu Bar, then iTunes and you'll be presented with an iPhone and iPod selection. This will export your video straight into iTunes for syncing to your iPod.
